Sounds like the relay for the cooling fans is bad. This is a common problem. Removing the wire from the temp sensor puts the fans into stay-alive mode, and they run constantly as you found out. Have the relay replaced and you should be fine. As far as the AC, it is most likely related to your cooling fan problem.
